Why does distribution before tamping make such a difference?

When coffee grounds leave the grinder, they land in mounds and empty pockets inside the basket. Water in the machine is lazy: it follows the easiest path, flowing through the gaps and leaving the mound dry. The result is a shot that is over-extracted in some parts and under-extracted in others, tasting bitter and sour in the same sip. Even distribution before tamping closes off that path, allowing water to flow evenly and producing a balanced shot. Calibrated-pressure tamper

Very important before ordering: the size

All the options here are 58.4 mm, the standard size for professional and semi-professional espresso machines such as Rocket, La Marzocco, Gaggia, and some De'Longhi models. If your home machine uses a 51 or 54 mm basket, like most smaller Breville and De'Longhi machines, these tools will not fit your basket. Measure your basket's diameter with a ruler before ordering. The difference between 58 and 58.4 mm is intentional because the tamper needs to be slightly narrower than the basket to fit inside.
